Introduction

Ingredients

    1 medium onion, chopped
    1 large carrot, peeled or scrubbed, chopped
    1 stalk of celery, sliced
    2 large cloves of garlic, minced
    1/2 tsp dried oregano
    1 medium potato, peeled, diced
    2 cups beef or chicken broth
    1 28 oz tin, diced tomatoes
    4-6 oz lean kielbasa sausage, cubed
    1 19oz tin black beans, or your favorite canned beans


Directions

1. Heat large pot with low fat cooking spray. Add onion, carrot and celery; cook and stir over medium heat until vegetables begin to soften.

2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in Kielbasa. Cover and simmer gently for at least 1/2 hour to blend flavours.

3. Drain and rinse beans. Add to soup. Heat until hot. Add salt and pepper to taste. Serve with crusty bread. (Even better the next day)


** We love this soup. You can prepare it ahead for a gathering and instead of simmering for 1/2 hour, put it in your crockpot on low and add the beans. By the time you are ready to eat (try to make it at least a half an hour) it will be ready to go. Great for potluck as it only gets better the longer it sits.

    Awesome! I left out the potatoes because they raise the glycemic index count. Substituted chicken for keilbasa, added 1 tablespoon of cornstarch mixed in cold water( a slurry)and it thickened great and was fantastic! It will be tommorrows lunch too. - 7/19/09

    I made this a few nights ago and it was AMAZING!!! And it's great that it makes loads of leftovers and they taste even better the next day! I will definitely be making this one again. Thanks for the great recipe!
    Tip: Use more than 1 potato and type of bean & no salt, the kielbasa is salty enough

    Yum! I doubled the recipe and froze some for later.
    I did it in a crock pot, but had to cook it on high for 3 hrs for the potatoes and carrots to cook thoroughly.

    This was good and flavorful. The recommended cooking times were a little off. Could have let it simmer a lot longer to be sure the potatoes were softer. Might be good over rice too. - 7/14/08

    I left out the carrot, celery and potato. Doubled the beans, kielbasa, and broth. The tomatoes I added had green chilies in them and I threw in a can of corn. It was awesome and very spicy. Will definetly make again. - 2/22/09

    Wonderful soup! Left out the celery and carrots. Added a can of Rotel tomatoes which gave it enough spice. Also added some fresh corn and used turkey smoked sausage. Hubby and I decided this was a keeper! - 11/9/10

    Made this tonight using my slow cooker. I put all but the sausage (used turkey) and beans in cooker. I added them at the last half hour of cooking along with 1 tsp. of cajun seasong. Serve it with a salad and bread sticks. My husband loved it...will make again. - 9/11/10

    Added an extra potato since canned black beans usually come in only 15 oz cans. Used a turkey smoked sausage and added chili powder and a bit of crushed red pepper to make up for the zest the kielbasa would offer. The sausage soaked the spices up great! Topped with a dollop of light sour cream. - 11/21/10

    Loved this soup, I fixed it today for lunch. I didn't have kielbasa so I substituted Italian Mild Sausage.

    To help cut calories a tiny bit....grill the sausage before adding to the soup....or sauté in a pan.
    It will get rid of some of the unhealthy grease. Every little bit helps!
