Number of Servings: 10

Ingredients

    1 cup white flour
    3/4 cup whole wheat flour
    1/3 cup sugar
    2 tsp baking powder
    1/4 tsp salt (optional)
    1 beaten egg
    3/4 cup skim milk
    1/4 cup canola oil

Directions

In a mixing bowl combine flour, sugar, baking powder, craisins and 1/4 tsp salt (optional). Make a well in the center. Combine egg, milk, and oil; add all at once to flour mixture. Stir till just moistened; batter will be lumpy. Lightly grease muffin cups. Bake in 400 degree oven about 20 minutes or until golden. Serve warm. Makes 10 to 12.

    Incredible!
    I added a tsp.of baking soda and used buttermilk.Added dried cherries just for grins.Came out just fine. - 7/22/07
