Introduction

Number of Servings: 4

Ingredients

    1 Can white tuna in water
    1 tbsp light miracle whip
    1 tbsp yellow mustard
    Pickle juice (from the jar)
    8 Whole Wheat Melba Toasts
    8 cherry tomatoes
    8 thin slices of light cheese
    Salt and pepper to taste

Directions

Drain tuna, and empty can into regular sized bowl. Add Miracle Whip and mustard, and mix to coat tuna. To reach desired consistency of tuna, add pickle juice from the jar.

On whole wheat Melba toasts, place slices of cheese. Cover the cheese with the tuna salad mixture. Top with cherry tomatoes, sliced. Add salt and pepper to taste.

Makes 4 2-toast servings. Can be served as a snack, or as a light lunch (2 4-toast servings)

    Yum! I never thought of adding pickle juice. I used dijon mustard and left off the cherry tomatoes, but I'll add them next time. - 5/20/07
