Easy soup- dried beans and lentils sold in the bulk section at Winco. Easy soup- dried beans and lentils sold in the bulk section at Winco.
Number of Servings: 6


    2 cups of beans/lentils
    6 cups water (I used 1/2 Fat Free Reduced Sodium Chicken Broth and half water)
    1 cup carrots
    1 cup onion
    1.5 cup bell pepper mix (frozen)


Purchase beans/lentils- I prefer to buy the mix in the bulk section at Winco, but any type of beans or lentils will do.
Cut carrots and onions
Bell pepper mix was frozen so take it out of the freezer and use as much as you'd like, I used 1.5 cups.
Can be made with chicken broth, bouillon cubes, or just water. I like the mix of the two for flavor, since I didn't add meat to the mix. If you are adding meat, you may want to use just water.
Bring to a boil, then simmer for 45 minutes or until the soup gets to a consistency you like.
