    2 c uncooked spiral pasta ( I used Ronzoni 7 grain fuzilli)
    3/4 lb. fresh asparagus, cut into 2-inch pieces
    1 med. sweet yellow pepper, julienned
    1 T olive or canola oil
    3 c. diced fresh tomatoes (about 6 med)
    6 oz. reduced-sodium fully cooked ham, cubed
    1/4 c. minced fresh parsley
    1/2 t . salt
    1/2 t. dried oregano
    1/2 t dried basil
    1/4 t cayenne pepper
    1/4 c Parmesan cheese


Cook pasta according to package directions. Meanwhile in a nonstick skillet, saute asparagus and yellow pepper in oil until tender. (actually this step could be done the night before for a quick put together the next day) Add tomatoes and ham; heat through. Drain pasta; add to the vegetable mixture. Stir in seasonings. Sprikle with Parmesan cheese.
One serving 1 1/3 cup; Equals 6 servings
