Yummy Peanut Sauce for Shrimp Yummy Peanut Sauce for Shrimp

    1 C. reduced sodium/fat chicken broth
    3 T creamy peanut butter sf or low fat
    2 T lite soy sauce
    1 t toasted sesame oil
    1 t hot chili oil
    2 T chopped cilantro


In a small saucepan, whisk together the broth, peanut butter, soy sauce, sesame oil and chili oil. Set the pan over medium heat, bring to a simmer, and let simmer for 5 minutes. Remove from the heat and stir in cilantro. Let cool to room temp. then store in a plastic container in refrigerator for up to 1 week or freezer for 3 months. Yield: Makes 1 cup; 4 servings
