    1 litre of vegetable stock or chicken stock
    1 tablespoon of olive oil
    Half a small onion, finely diced
    300grams of brown rice
    500grams spinach, chopped
    grated rind and juice of 1 lemon
    Salt and pepper to taste


1. Place stock in a saucepan and simmer gently.
2. Heat the oil in another saucepan and add the onion. Saute for 3 minutes.
3. Add the rice to the pan with the onion and stir gently to coat the grains with the oil.
4. Add enough of the stock to cover the rice and stir well.
5. Simmer gently stirring frequently. When the liquid is almost completely absorbed ad more of the stock. Contine adding the stock in stages and stirring until it is absorbed.
6. Before adding the last of the stock, stir in the spinach, lemon rind and juice and salt and peppr to taste.
7. Increase the heat, stirring well and add the last of the stock.
8. Cook for 3 more minutes then serve.
