Ingredients

# Neufchatel Cheese, 5 oz
# Spartan small curd nonfat cottage cheese - 1 cup,
# Chobani Greek Yogurt, .75 serving
# Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb)
# *Muir Glen Organic Chunky Tomato & Herb Sauce, 1.5 cup
Spartan 6 Cheese Italian Blend - 1/3 cup serving, 2/3 cup
Directions
Preheat oven to 350. Slice eggplant into thin "noodles' lengthwise. Spray pan (8x10) with nonstick olive oil. Lay eggplant in bottom- add some garlic powder and italian seasonings if desired and bake for about 30-40 mins.
Mix the Neufchatel, cottage cheese and Greek yogurt together. Or use Ricotta Cheese - I just didn't have any on hand.
Remove the 'noodles' from the pan and respray. arrange them again covering the bottom with a single layer, cover with Cheese mixture, then sauce. Lay another layer of 'noodles' on top then cheese mixture, sauce and sprinkle with shredded italian cheeses. Put back in the oven and bake for another 30 mins.
