Introduction

I modified another recipe to suit our tastes and it came out terrific! I modified another recipe to suit our tastes and it came out terrific!
Number of Servings: 8

Ingredients

    1 spaghetti squash (approx 3 lbs will yield 630 grams cooked)
    2 tbsp minced garlic
    1/2 medium sweet onion, sliced on the diagonal
    1 small zucchini squash, sliced and quartered
    1 small summer (yellow) squash, sliced and quartered
    1 pkg (12-oz) sliced mushrooms
    1 14.5 oz can Hunt's diced tomatoes with garlic, basil and oregano
    cooking spray

Directions

Cut spaghetti squash in half and scoop out middle section with seeds. Place halves face down in approx 1 inch of water (or chicken broth if desired) and cook for 10-20 minutes in the microwave. You will know it is done when the flesh shreds easily with a fork. Once it is done, allow to cool so that you can handle it easily then, using a fork shred the flesh so that it looks like spaghetti. Discard shell.

While spaghetti squash is cooking, saute garlic and onion until tender. Add zuchinni and summer squash and mushrooms; saute until tender. Add diced tomatoes and heat through.

Combine with spaghetti squash, add salt and pepper to taste. May also top with parmesan cheese (but this is not included with the nutritional information).

Serving size equals 1 cup. Makes approximately 8 servings.
