Introduction

This is the best homemade vegetable soup recipe I've found so far. Thick soup and great alone or with whole wheat crackers. Packed with vitamins... Nutritious... and doesn't kill your daily calorie count~
High sodium is due to the canned tomatoes, and can be reduced dramatically by using low sodium canned tomatoes, and other low sodium vegetables as desired.

Ingredients

    1.25 lbs Stir Fry Beef
    1 onion, chopped
    28 oz can Peeled Whole Tomatoes, diced
    14.5 oz can Del Monte Peas and Carrots
    14.5 oz can Del Monte Diced New Potatoes
    16 oz. Bush's Best Large Butter Beans
    15.8 oz can Bush's Best Blackeye Peas
    29 oz can Veg-All Original Mixed Vegetables
    14.5 oz can Margaret Holmes Tomatoes, Corn, and Okra
    .75 cup Blue Ribbon Extra Long Grain Enriched Rice
    1 cup Barilla Plus Elbow Macaroni

Directions

Boil meat in large pot until cooked through and tender. Chop onion. Drain all canned vegetables except tomatoes. When meat is done, add onion and all canned ingredients, including juice from tomatoes. Reduce heat and allow to simmer for approximately 30 minutes, or until flavors have mixed well and vegetables are tender. Add rice and macaroni. Allow to cook until rice and macaroni are tender, about 20 minutes. Serve.

Serving Size = 1 cup
Makes approximately 12 servings
