    2 bunches spinach, stems removed
    14 oz. artichoke hearts, packed in water
    1 c. onion, diced
    3 cloves garlic
    3 slices bread, toasted and cubed
    1/2 c. chicken stock
    1/4 c. parmasan cheese
    1/2 tsp salt


Heat pan and oil. Add onion and garlic and cook till soft. Add spinach and cook until wilted. chop, drain and dry artichoke hearts. Add to pan. Add 6-7 sprigs of Thyme that have been chopped. Stir and add in cubed bread. Add chicken stock to moisten. Sprinkle in cheese and combine.
