    1 pie crust (I use the frozen kind)
    3 beaten eggs
    1 1/2 c half and half
    1 medium onion chopped
    1/4 tsp salt
    1/8 tsp black pepper
    dash ground nutmeg
    6 slices bacon
    1 1/2 c shredded swiss cheese
    1 tbsp all-purpose flour


Heat oven to 450 degrees. Bake pie crust coverd with double thickness heavy-duty foil for 5 minutes. Remove foil and back for 6 more minute3s or until pastry is almost done. Remove from oven and reduce oven temp to 325 degrees. While crust is cooking, stir together eggs, half and half, salt, pepper and nutmeg. Set aside. In a skillet, cook bacon until crisp. Remove from pan and crumble. Cook chopped onion in 2 tbsp of bacon drippings until tender. Add bacon, onion, swiss cheese and flour to egg mixture and combine well. Pour into hot pastry shell. Bake for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes.
