Introduction

Use your choice of herbs and spices to make this an easy and versatile side dish! Use your choice of herbs and spices to make this an easy and versatile side dish!

Ingredients

    5 large baking potatoes, any type or equivalent small new potatoes
    1 c. chopped onion
    1 T. butter
    Garlic & Herb Salt-free Seasoning or herbs of choice
    3 T. water

Directions

1. Slice potatoes into thin rounds, peeling if desired, and place in a 2 quart microwaveable casserole.
2. Add onion, water, seasoning and dot with butter.
3. Cook on high power for 15 min., stopping to stir every 5 min.

Time may need to adjust for different microwave strengths. Try this recipe using rosemary, basil or parsley, too! If using new potatoes, I cut them into quarters rather than slicing into rounds.
