Ingredients

5 fl oz of buttermilk
1 egg
4 slices of wholemeal bread cubbed
1 tsp of oil
2 oz of celery chopped
3 oz of onion chopped
2 oz of peppers chopped
2 oz of carrots chopped or coarsely grated
1 garlic clove chopped or crushed
570 grms of lean minced beef
1/2 tsp of salt
pinch each of Oregano , Basil and Thyme
3 tbl spoons of Chilli sauce
2 tsp of brown sugar
1/2 tsp of dry mustard powder
1 tsp of vegetable oil
Directions
Mix buttermilk and egg together and pour over bread cubes and set aside
Heat oil in a non stick pan and add vegetables and garlic and sauté stirring constantly until vegetables are tender
add to bread mix then add mince salt and pepper herbs and mix well
mix chilli sauce with sugar mustard and set aside
preheat oven to 350 f , 180 c gas mark 4 ,Cover a roasting rack with tin foil ( silver foil ) and grease with oil , pierce foil several times to allow juices to flow through while cooking set the meat mixture on to the foil and using hands form into a ring . Place rack on top of a roasting tin and place in oven bake for 35 to 45 mins until browned Brush chilli sauce over the ring and return to oven for a further 15 mins longer
Serve either hot or cold Great for picnics or packed lunches
