    3 C Pinto beans
    1 Lg Onion (diced)
    3 Cloves garlic (sliced thin)
    2 4" sausage links (diced)
    3 tbsp Olive Oil
    2 tbsp red chili flakes
    1 tbsp black pepper
    1/2 bag frozen spinach


soak beans for at least an hour.
sautee onions and garlic in oil til translucent then add pork. cook until carmalized add chili and black pepper.
bring beans to a boil (i used about 1 gallon water).
add spinach,sausage and onion mix. turn down to simmer and cook for two to three hours (check beans after an hour and a half)
