Ingredients

    red skin potatoes
    salt
    butter
    cream
    basil
    chives
    pepper

Directions

place red skins in pot, fill pot with cold water, enough to cover potatoes an inch or two above potatoes. add some salt to the potatoes. bring to a boil and cook until fork tender, about 25 minutes. drain and return potatoes back to pot. mash lightly, I like these lumpy (unlike my traditional mashed potatoes) add butter and cream, mix. Then add in the chopped basil and chives. Add salt and pepper to taste.
