    Pasta 1/2 pound uncooked
    Extra virgin olive oil 1.2 TBSP
    20 Cherry tomatoes diced
    2 TBSP minced garlic
    8oz package baby spinach
    1 Cup Ricotta cheese Whole milk
    1 Cup whole milk mozzarella cheese
    1 1/2 boneless skinless chicken breast sauteed and diced


Take the chicken breast saute it with salt and pepper to taste

Remove from heat and dice into small pieces

Bring water to a boil to make the pasta After pasta is made and drained reserve 1/4 cup of liquid for later

Put oil, tomatoes, and garlic in frying pan and saute for 2 minutes

Add spinach in batches until it is wilted

Add in the saved water from earlier, the ricotta cheese and the mozzarella cheese.

Add in the chicken and cook until the cheese is melted and everything is blended together

Makes 7 1 cup servings
