    Noodle Mixture:
    I know it sounds odd but it's such delicious surprise! I make it ahead in bulk and store in an airtight container.
    1 (3 ounce) package ramen noodles, crushed
    2 tablespoons butter, melted
    2 tablespoons of sugar

    I make this in bulk and stash in a jelly jar in the fridge. Keeps for quite awhile but you'll finish it before it has time to go bad. :) I even use as a marinade for grilled chicken!
    1/4 C orange juice concentrate
    1/3 C soy sauce
    1/2 oz ginger,
    1/2 oz garlic, minced
    1/2 C olive oil
    1/2 tsp red chili flakes (optional)

    4 cups shredded bok choy
    5 green onions, thinly sliced
    2 cooked chicken breast, chopped
    1 (5 ounce) can water chestnuts, drained
    1 small can of mandarin orange slices
    15 fresh snow pea pods
    I add 1 tbsp GROUND flax or chia seed to give this salad an Omega 3 whammy. Note: it is not calculated in the nutritional info.


1.Crumble noodles into frying pan and toss with butter and sugar. Cook on medium high heat until sugar carmelizes. Remove and let cool. Will keep for weeks in airtight container and you can disperse into salad as you wish.
2. Combine all dressing ingredients together in a blender and pulse until well combined. (DO NOT overblend - it will emulsify!)
3. Combine all salad ingredients and toss.
Add dressing to taste and toss with noodles. Serve immediately.
