Introduction

Easy to make stovetop dinner. Serve with salad or rice.

Ingredients

    1 Canned Tomatoes
    1 Cup Shredded Cooked Chicken
    1 Cup Mushrooms
    1 Diced Bell Pepper
    1/2 Cup Green Olives
    1 Cup Frozen Corn

Directions

Saute peppers and mushrooms in olive olive.
Add shredded chicken and corn.
Add the can of tomatoes and olives and let simmer for 20 minutes until liquid is reduced.
Add spices to taste.

Service with salad or rice.
Serves 4.

    I like the versatility of your recipe. I used an olive tapenade that I already had in the fridge to top this one off with marinated mushrooms, since they were there, too. It was great! - 4/10/09
