    150 grams kosher for passover noodles
    1 3/4 cup zucchini, sliced into half moons
    1/2 white onion, thinly sliced
    2 plum tomatoes, chopped
    2 Tbsp. balsamic vinegar
    1/3 Tbsp. extra virgin olive oil
    seasonings of choice
    2 Tbsp. Parmesan, grated
    1 cup water


1 - Cook noodles according to instructions on package. Drain and set aside.

2 - Heat up oil on medium heat. Add zucchini and onions, and cook for 3-5 minutes. Add 1 Tbsp. balsamic and seasonings. Cook another 5 minutes.

3 - Add 1/2 cup water, and simmer 5-6 minutes. Add tomatoes and the rest of the water, and simmer another 5-10 minutes, until it forms a little bit of a sauce.

4 - Add noodles, the Parmesan and the rest of the balsamic. Stir, and heat through. Serve.
