I love creamy soups and this one hits the spot. I love creamy soups and this one hits the spot.
Number of Servings: 4


    3 summer squash
    1/2 bunch of fresh spinach(can substitute frozen)
    1 cup part skim ricotta cheese
    2 table spoons light or fat free cream cheese
    1 cup 2% or fat free milk
    salt to taste
    pepper to taste


Cut squash into cubes and boil covered in water until tender
In a blender mix all ingredients and blend until smooth.
Add salt and pepper to taste.
Heat and serve.
I sprinkle grated parmesan on top for presentation.
