Here's something a little different for breakfast or brunch. Here's something a little different for breakfast or brunch.
Number of Servings: 4


    4 slices cooked turkey bacon
    1/2 cup red or green peppers
    8 mushrooms
    1/2 an onion, chopped
    2 large eggs
    2 egg whites
    1/8 cup skim milk
    2 slices Naan bread or pitas
    2/3 cup shredded cheese


chop up the vegetables and turkey bacon and fry in a pan. While they are cooking, scramble the eggs, egg whites, and milk. Add to the vegetables and turkey bacon. When cooked, divide the mixture equally between the pieces of Naan bread or pitas. Sprinkle with cheddar cheese. Put in the oven for 5 minutes or until cheese is melted. Serves four.
