Introduction

A nice twist to the canned version.

Number of Servings: 4

Ingredients

    1 pkg Fresh Mushrooms (12oz - stems removed)
    Onion - 2 slices (diced)
    3 cloves fresh garlic (pressed or diced very fine)
    1 Cup - Fat Free Half & Half
    1/2 Cup plain low fat yogurt
    2.5 cups chicken (or vegetable) broth
    1 tblsp - Extra Light Olive Oil
    Season Salt - 1/4 tsp
    Celery Salt 1/4 tsp
    Salt - to taste
    Pepper - to taste
    Corn Starch - 2 tblsp





Directions

Makes 4 - 1-cup servings
Saute onion & garlic and seasoniings in 1 tsp olive oil until onions are carmelized
Meanwhile remove stems & slice mushrooms
(I use an egg slicer)
Add remaining olive oil and saute mushrooms until cooked down (about 5 min)
Add broth (reserving 1/2 cup)
Cook over low heat 1-2 hours
Mix yogurt with remaining broth
Slowly stir in yogurt mix and half and half
Mix corn starch with small amount of water
add to soup.
Stir frequently until soup boils to thicken, remove from heat
