Number of Servings: 12


    2 cups flour
    1/2 cup brown sugar
    1 Tbs. baking powder
    1-1/2 tsp cinnamon
    1/2 tsp nutmeg
    2 eggs
    1/2 cup milk
    1 cup canned pumpkin
    1/4 cup oil
    1/2 tsp vanilla

    1/4 cup chopped walnuts (optional - not in calorie count)
    3/4 cup raisins (optional - not in calorie count)


Preheat oven to 400 degrees F.
Grease a 12-cup muffin tin or use paper liners.
Makes 12 regular-size muffins.

Combine flour, sugar, baking powder, cinnamon & nutmeg: blend well. Make a well in the center.

In another bowl, beat eggs. Add milk, pumpkin, oil & vanilla; blend well. Add to dry ingredients; stir just until moist. Add nuts and/ or raisins, if desired..

Spoon batter into prepared muffin tin, filling 3/4 full. Bake for 20-25 minutes or until brown.
Can sprinkle with cinnamon and sugar before baking.
