Introduction

This is a fabulous side dish, or even main dish in the summer, to bring anywhere youre headed. It's crazy quick to make and brings out all the flavors of the veggies. Marinate this anywhere from a few minutes to overnight for the best flavor! This is a fabulous side dish, or even main dish in the summer, to bring anywhere youre headed. It's crazy quick to make and brings out all the flavors of the veggies. Marinate this anywhere from a few minutes to overnight for the best flavor!

Ingredients

    Tri-colored rotini pasta (1 box = 12oz)
    1 cucumber, peeled and chopped
    2 Bell Peppers (different colors looks best), chopped
    1 red onion, diced
    1 cup of Italian dressing (zesty marinade version is best)
    3/4 cup of Grated Parm. Cheese (or to taste)

Directions

Chop up all the veggies and mix it with the dressing and grated cheese. Cook the tri-colored rotini until al-dente (8-9 minutes depending on brand). Drain the pasta and run in a colander under cold water for at least one minute. Mix in the the pasta with the veggies and dressing and enjoy! The longer it marinates, the more flavorful it will be. This can even be made the day before!
