Great easy-to-make tomato sauce for pasta. Perfect for vegetarians as there is no meat used. Great easy-to-make tomato sauce for pasta. Perfect for vegetarians as there is no meat used.
Number of Servings: 4


    4 - large ripe tomatoes, seeded and chopped into pieces no bigger then 1/2".
    3/4 cup of chopped, fresh mushrooms - white or portabella.
    1 tsp of chopped garlic (feel free to use more if you love garlic)
    2 tbsp of fresh parsley, finely chopped
    3 tbsp of fresh basil, finely chopped
    2 tbsp red wine vinegar
    1 tbsp olive oil (I prefer extra virgin)
    1/4 tsp fresh ground black pepper
    1/2 tsp sea salt (regular salt will work too)


This sauce will be enough for 4 normal sized pasta portions.

Prepare your tomatoes, mushroom, basil, parsley, and garlic.

Heat the olive oil, red wine vinegar, and garlic in a large skillet over high heat - stir while heating.

Add your chopped tomatoes, mushrooms, basil and parsley. Stir to get everything coated with the the olive oil, vinegar and garlic.

Add your salt and pepper - stir again.

Reduce the heat to a simmer, cover, and let simmer for about 25 minutes. Check regularly and stir to make sure everything is cooking well.

After 25 minutes remove from heat and serve over the pasta of your choice. This is a chunky sauce that will give your pasta dishes a whole new 'mouth-feel".
