    2 - 10 oz. packages chopped spinach frozen, thawed and drained
    1 cup lite ricotta cheese
    3 green onion, sliced
    3/4 tsp lemon pepper seasoning
    1/2 lemon, juiced
    3 medium potatoes, peeled and thinly sliced
    1/2 cup mozzarella cheese, shredded
    1 egg
    2/3 cup milk, nonfat


Preheat oven to 375 degrees. In a medium bowl, stir together green onion, spinach, ricotta cheese, lemon juice and lemon pepper seasoning. Spray 9 inch square baking dish with cooking spray. Place one layer of the potatoes in bottom of dish. Spread 1/2 the ricotta mixture over the potatoes and top with 1/2 cup of the mozzarella cheese. Place a second layer of potatoes on top of cheese, then layer remaining spinach and top with remaining potatoes. In a small bowl beat egg and milk together and pour over potatoes. Top with remaining 1/4 cup of mozzarella cheese. Bake for 35 minutes or until cheese on top is bubbly and golden brown. Cut into squares and serve.
