Number of Servings: 1


    2 large eggs
    1 tablespoon Fat Free Mozarella
    1 tablespoon chopped bell pepper
    1 tablespoon chopped fresh mushroom (about 1 slice)
    1 tablespoon chopped onion (dice it nice and small!)


Chop up the veggies nice and small
Preheat a nonstick pan over medium heat
Scramble the egg
Add the cheese and chopped up veggies
Stir enough so everything is evenly disbursed in the egg
Pour into pan
Allow to cook 3-4 minutes
Allow to cook for an additional minute
(The goal is to cook the egg with no watery/leaky uncooked stuff to mar the yumminess!)

(It's actually pretty large, so it could possibly make 2 servings if served with toast or fruit. Nutritional information marked as just 1 serving!)
