A rich dark bran muffin. A rich dark bran muffin.
Number of Servings: 12


    1 Cup Milk
    1 Tsp Baking Soda
    1 Cup Whole Wheat Flour
    1/4 tsp Salt
    1/2 Cup Butter with Canola Oil
    3/4 Cup Brown Sugar
    100 ml or 1/2 Cup Egg Substitute
    1 Tblsp Molasses
    1 Cup Bran
    1 Cup Frozen Blueberries.


Makes 12 Medium Muffins

Preheat oven to 375 degrees F.

Combine milk and baking soda together.
Cream butter and brown suger throroughly. Add Egg and beat well.

Add milk and baking soda mixture, then molasses and bran - Blend.

Stir in flour and salt mixture and fold in frozen blueberries.

Spoon into well greased medium muffin cups and bake at 375 degrees F. for 20 minutes. Muffins are done when toothpick comes out clean and top is golden.
