Number of Servings: 12


    2 large potatoes cubbed
    1/4 c butter
    1/4 c flour
    26 oz chicken stock
    1 tsp salt
    1 tsp black pepper
    1/4 tsp garlic powder
    1 12 oz can corn + the water from the can
    1 tbsp real bacon bits
    1 c shredded low fat cheddar cheese
    1/2 c fat free half and half

    Green onions
    Low fat sour cream


Peel and cube potatoes. Microwave until tender. While potatoes are cooking, melt butter in large sauce pan. Add flour and combine (make a rue). Add chicken stock, salt, pepper, garlic powder, half and half and corn. Bring to a boil until thicken. Stir in bacon and cheese until cheese is melted. Add potatoes. Garnish with green onions and sour cream. Makes 12 one cup servings.
