    Chicken bones to make broth
    Chicken Breast, no skin, 15 ounces, shredded
    Celery, raw, .5 cup, diced
    Onions, raw, 1.5 medium
    Spinach, fresh, 3 cup (remove)
    Potato, raw, 4 small, cut in medium size pieces
    Zucchini, .5 cup, sliced, sliced
    Carrots, raw, 2 medium, sliced
    Peppers .75 cup, chopped
    Garlic, 2 tsp
    Water, tap, 6 cup
    Cilantro, raw, 3 tbsp, chopped finely
    Yuca, 1.5 cup, chopped in medium size pieces


Bring 3 cups water and chicken bones to a boil with some onions and garlic to make a broth. You can add the chicken pieces to be cooked as well.
When done, remove the meat and bones and add veggies, except zucchini and spinach.
Season to taste and bring to a boil.
Reduce heat and let simmer until starches are cooked and somewhat soft.
Add zucchini and spinach and turn off heat. Let stand, covered, for a few minutes for the soft veggies to cook.
Can be served with rice (not included in calorie count).
Gives about 10 generous one-cup servings.
