Ingredients

400g can of plum tomatoes
2.5lb of flank steak, diced
3 cloves of garlic
1 cup of chopped onions
12 medium mushrooms, peeled and cut into quarters
2 tsp of dried parsley
1 tsp of paprika
0.5 tsp of oregano
0.5 tsp of thyme
1 beef stock cube
0.5 tsp of splenda
1 tbsp of extra virgin olive oil
1 tbsp of mild chilli powder
Directions
serves 6
1. peel the garlic and place in a food processor with the tomatoes and splenda
2. heat the oil in a large pan until it starts to smoke, flash fry the beef until the outside is brown.
3. crumble the stock cube over the beef and stir in well, now add the mushrooms and onions and fry while stiring continuously.
4. now coat the beef and vegetables with the paprika, chilli, parsley, oregano and thyme. Stir in well to ensure the ingredients get a good coating.
5. add the tomato and garlic mixture and stir un well.
6. leave to cook on the lowest setting*, stirring occasionally for 2 hours.
7. serve and enjoy
*or transfer to a slow cooker and leave to cook for the day.
