Number of Servings: 8


    2-15oz cans black beans low sodium (3.5 cups)
    1-15oz can garbanzos low sodium (1.75 cups)
    1 c green pepper (or yellow, red, orange)
    3/4 c chopped onion
    1 clove garlic chopped
    red and black pepper to taste
    1/2 heaping tsp cumin


Rinse beans. While draining, Take a large bowl and combine the spices and mayo. Add beans and mix lightly but thoroughly then fold in the peppers/onion and chill (overnight is best).

GREAT w/ sliced avocado on top (not included in nutritional values).
Makes 8 one cup servings
