This salad is zesty, sweet and with a satisfying crunch. This salad is zesty, sweet and with a satisfying crunch.
Number of Servings: 6


    3 Cups Torn Mustard Greens
    2 Cups Baby Spinach
    1 Cup Sliced Mushrooms
    1/2 Cup Thinly Sliced Red Onion
    1 Cup Diced Extra Firm Tofu
    1/2 Cup FF Sour Cream
    1/4 Cup Dijon Mustard
    1 Tbl Honey
    12 tsp Cayenne Pepper


Wash, dry and tear Mustard greens. Toss together with spinach, mushrooms, and onion.
Mix together sour cream, mustard honey and cayenne to make a dressing and toss with tofu. Let stand for a few minutes until tofu absorbs some of the flavor, then toss the tofu mixture with the greens. Salad refrigerates well.

Makes about 6 1 cup servings.
