•2/3 cup canned pumpkin
•1 egg
•2 egg whites
•1tsp oil
•½ cup splenda
•1 scoop choc protein powder
•1/3 cup unbleached all purpose flour
•¼ tsp salt
•1 tsp baking powder
•1 tbsp of cinnamon

Directions:
•In large bowl mix pumpkin, egg, egg whites, oil, and splenda
•Add the rest of the ingredients and stir (you should want a medium thick batter, sometimes protein powders vary so if need add a little water)
•Pre-heat oven to 325F and spray muffin baking cups with a bakers joy, pam , butter spray or something like that.
•Cook for 10 mins or until toothpick is almost clean. You want these a little moist.
