Introduction

These are delicious as a side dish or desert! Also good with chopped pecan bits on top. These are delicious as a side dish or desert! Also good with chopped pecan bits on top.

Ingredients

    Sweet potato, 3 (5" long)
    Honey, 4 tbsp
    Brown Sugar, 3 tsp packed
    Nutmeg, ground, 1/2 tsp
    Coconut, raw, 2 tbsp, shredded

Directions

Peel and cut sweet potatoes into about 3/4" slices. Place in a single layer in a skillet. Add just enough water to coat the bottom of the pan (do not cover sweet potatoes). Turn on heat to medium.

Drizzle honey and crumble brown sugar on top of the sweet potatoes. Sprinkle on nutmeg. Cover and simmer for 10 minutes.

Turn over each sweet potato piece and sprinkle on coconut. Cover and simmer 10 more minutes.
