    1 (10 oz.) pkg. frozen chopped spinach
    4 eggs
    Salt and pepper to taste (optional)
    1 tbsp. lemon juice
    7 oz. Feta cheese, crumbled
    Parmesan cheese


Spread a drop of olive oil inside pan. Sprinkle some parmesan cheese on sides and bottom of pan. Cook spinach according to package directions. Drain spinach and squeeze out as much moisture as possible; it should be fairly dry. Mix the eggs. Add the salt, pepper, and lemon juice. Stir in spinach and Feta cheese. Fill pan and sprinkle parmesan cheese on top. Bake at 375 degrees for 25 to 35 minutes or until a knife inserted in center comes out dry. Cool for 10 minutes before serving. Can also be served at room temperature.

Tip: Feta cheese made from sheep’s milk is better tasting, such as the brand Valbreso.
