Ingredients

    1 large cucumber peeled and sliced thinly
    6 roma tomatoes chopped (large chunks)
    1 sweet yellow onion sliced
    1/2 cup feta cheese crunbled
    16 jumbo black or kalamata olives (pitted)
    2 tbsp olive oil
    2 tsp ground oregano
    1/4 tsp cayenne pepper
    1/2 tsp kosher salt

Directions

Peel and slice cucumber. (A mandolin makes this go a lot faster!) Chop or slice 6 ripe roma tomatoes. Slice sweet yellow onion very thinly. Toss them together in a bowl. Sprinkle with feta cheese and add olives, olive oil, oregano, cayenne pepper, and salt. Toss again. Chill and serve. Good with pita chips (not factored into the nutritional value of this recipe.)
