Introduction

This can be used for either fajitas or quesadillas. This can be used for either fajitas or quesadillas.
Number of Servings: 8

Ingredients

    2 Tbs Extra Virgin Olive Oil
    1 Green Pepper cut in strips
    2 Small or 1 medium Onion cut in strips
    2 lbs Lean Steak
    1 pck or 4 tsp Fajita seasoning
    1 cup salsa
    8 Tbs light sour cream
    1 cup low fat shredded cheese
    8 Whole Wheat tortillas

Directions

Put olive oil in skillet and heat. Then add onions cook until mostly done, add green pepper and steak. Cook until mostly done add fajita seasoning. Cook until everything is cooked as you like it.

For faijtas just put on tortilla and top with a little salsa and 1 Tbs sour cream and a little cheese.

For quesadillas warm another skillet or gridle take one tortilla add steak mixture to half, add cheese on top. Fold in half place in skillet cook on each side until golden brown and crunchy, serve with a little sour cream to dip or on top.
