    100g chicken breast
    3/4 tbs olive oil
    100g squash
    125g zucchini
    50g mixed veggies
    2tsp butter/margarine
    2tsp bacon bits
    2tsp grated parmesan
    salt, pepper, cumin, red pepper flakes, garlic to taste!


Saute onions and garlic in 1 tsp of olive oil, add all the veggies and 1/4 cup of water and seasonings (salt, pepper, cumin (I wanted smokey flavor!), red pepper flakes), bring to a boil then let simmer for 10-15 minutes until soft and most water is absorbed. Meanwhile season chicken to taste and broil/grill 3-5 minutes each side. When veggies are done, mash with potato masher add, bacon bits and parmesan cheese and serve!

Either frozen or fresh veggies will work! Whatever you have !
