    1/2 cup extra-virgin olive oil
    3 garlic cloves, minced
    1/4 cup pasta cooking water
    1/2 t crushed red pepper flakes
    1 1/4 t kosher salt (if you don't have kosher, I'd use about 1/2 t of table salt)
    1 T dried parsley


Heat the oil in a large saucepan over medium heat. Add garlic and cook, stirring, for 30 seconds, making sure it doesn't brown. Add the pasta water, red pepper, salt and parsley and bring to a boil. Toss with cooked pasta

(This amount works well with 1 pound of pasta. Adjust amounts to make smaller servings. I like to use whole-wheat linguine and add some lightly seasoned, sauteed chicken breast)

  • very easy,good flavor. my picky 11 yr. old and I enjoyed it and we're looking forward to having the leftovers for lunch. I did add another tsp. of red pepper flakes and black pepper to taste - 4/16/14
