Introduction

Ingredients

1-16 oz can pinto beans, drained and rinsed
1 Tbs vegetable oil
1 c. chopped yellow bell pepper
1 small onion, chopped ( 1/4 c.)
1/2 tsp salt
1/4 tsp hot chili sauce
2 cloves garlic, crushed
1 Tbs chopped fresh cilantro
1 small tomato, seeded and chopped (1/2 c.)
1/2 c. chopped smoked ham
Directions
Heat oil in a saucepan over medium heat. Cook onion for a minute or two, then add the bell pepper, salt, and pepper sauce. Stir a bit, cooking for another couple minutes until onion looks nearly translucent. Add the garlic and cook and stir another minute until garlic is fragrant. Stir in pinto beans, cilantro, and tomato. Cook until hot, stirring a bit.
Serve with extra yellow bell pepper and a piece of whole wheat bread for wiping up the good stuff!
