Number of Servings: 6


    12 oz whole wheat linguine
    4 c arugula leaves
    1 c tightly packed basil leaves
    3-4 cloves garlic, minced
    2 tablespoons pine nuts
    ground black pepper
    1/3 c EVOO
    1/4 c grated Permesan cheese


Mix the arugula, basil, garlic, and pine nuts in the food processor. Coarsely chop.
With food processor running, slowly add oil until mixture is smooth.
Toss pasta with pesto. Sprinkle with the cheese.
