    2 1/3 Lbs (about 7 - 5 1/3 oz.) Golden Butter Potatoes
    1 med. Onion, chopped
    1 C Chopped Celery
    3 Hard-cooked Eggs, chopped
    1/4 C Green Bell Pepper, diced
    1/4 C Red Bell Pepper, diced
    2 tbsp Robert Rothschild Farm Roasted Red Pepper & Onion Dip & Relish
    1 Tsp freshly ground black pepper
    1 Tsp Sea Salt
    1 Tbsp Hengstenberg® medium hot German mustard
    1/4 C Kraft® reduced fat Mayo with Olive Oil
    1 C plain yogurt
    1/4 C Fresh Parsley Leaves, chopped


1. In a large pot, boil the potatoes with the skins on for 15 to 20 minutes until tender. Let the potatoes cool just to the touch and cut into cubes.

2. In a large bowl, combine the remaining ingredients. Add the potatoes and mix gently. Sprinkle chopped parsley leaves over potato salad.

3. Chill at least one hour.
