Ingredients

    • Roll of phyllo dough (about 20 sheets)
    • Frozen or Fresh (cooked) chopped spinach (10 oz)
    • Fat free cottage cheese (1/2 cup)
    • Eggs (two)
    • Low Fat Feta Cheese (1/4 cup)
    • Pam Light Olive Oil cooking Spray

Directions

Heat oven to 350 degrees.

Use light cooking spray on bottom of a glass 9 x 13 baking dish. Set aside.

Place 10 ounces of frozen spinach in the microwave to cook or prepare fresh spinach.

Drain spinach and place in bowl.

Add two eggs.

Add a half cup of fat free cottage cheese. (Small curd is best.) and ¼ cup feta cheese

Use salt and pepper to season mixure. Set aside.

Open phyllo dough and place one layer on the bottom

Spray each layer of phyllo dough lightly with Pam until you've used 10 layers

Spoon spinach mixture on top of phyllo

Cover with another sheet of phyllo. Gently spray Pam between each layer until you've used the rest of the phyllo dough. (About 10 sheets).

Cut into 8 pieces before placing in oven.

Place in oven for about 30 minutes.

When done, let cool and then serve.
