    2 teaspoons olive oil
    3 Chicken Breasts ( 1.65 lbs)
    2 cloves Garlic
    2 medium chopped shallots
    3 cups tomatoes ( 1can Del Monte petite diced and 1 cup fresh grape tomatoes cut up, can use all canned also)
    1/2 cup white wine
    2 Tbspns capers + 2 tsps brine
    4 Tbspns basil chopped ( or more if you really like basil)


Slice chicken breasts into similarly sized strips. Sprinkle chicken breasts with salt and pepper. Heat non stick skillet over medium heat, saute garlic, shallots and chicken in olive oil. Chicken takes about 3 to 5 minutes on a side. Stir in tomatoes, wine, capers, brine. Simmer until tomatoes release juice then let sauce contine simmering to reduce and thicken. Sauce will carmelize in center of pan so watch heat as it nears readiness. Capers and Basil make this dish. Can be served by itself or over orzo, or pasta. Calorie Count is for a serving by itself.
