Introduction

No eggs, just flour, bananas, baking powder, milk and spices.

Ingredients

    1 c. whole wheat flour
    2 ripe bananas
    2 t. baking powder
    1/2 t. cinnamon
    pinch nutmeg
    1 c. skim milk
    1 T. maple syrup

Directions

Put mashed banana in large bowl. Sift flour, baking powder, cinnamon and nutmeg onto banana. Stir until flour moistened, but not totally combined. Make well in center. Add milk and syrup and stir until smooth. Set aside 1 hour.

Heat large nonstick pan or griddle over medium heat and coat with cooking spray. Cook in batches using1/4 c. batter per pancake. Cook 3-4 min. per side. Serve drizzled with syrup and sliced bananas.
