    2 cups cooked black beans
    2 teaspoons olive oil
    1/2 cup onion, chopped
    2 cloves garlic, minced
    1 jalepeno, minced (leave seeds if you can stand the heat)
    1 1/2 teaspoons ground cumin
    2 tablespoon red wine vinegar
    2 handfuls fresh cilantro leaves, chopped

    1 cup pico de gallo

    2 cups cooked brown rice


Heat olive oil in a medium, non-stick skillet over medium-high heat. Add onion and cook until soft. Add garlic and cook, stirring frequently, for a minute. Add jalapeno and ground cumin and cook, stirring constantly, for another minute. Add vinegar, then black beans. Reduce heat to medium-low and cook until heated thoroughly.

Remove from heat, add cilantro and stir together. Season to taste.

Serve 1/2 cup beans with 1/2 cup rice and 1/4 cup pico de gallo. Serves 4.
