    1 Tablespoon olive oil
    1.5 lbs. boneless pork loin cut in 1 inch cubes
    1 large diced onion
    4 cloves minced garlic
    1 (14.5 oz.) can diced tomatoes and juice
    1 bunch chopped fresh cilantro (with stems)
    1 tsp. cumin
    1/2 tsp. coriander
    1/4 tsp. cayenne pepper
    3 medium peeled yams cut in 1/2 inch chunks
    2 - 15 to 19 oz. cans black beans rinsed and drained
    salt to taste


Preheat oven to 350 degrees. In a five quart dutch oven, heat oil on medium high and brown pork in small batches. Set aside. In remaining drippings, saute' onion and garlic. Add tomatoes and juice, cilantro, all spices and 2 cups water. Stir in reserved pork. cover and bake 30 minutes. Stir in yams and bake covered until done - about 40 minutes. Stir in drained and rinsed beans and heat covered about 15 minutes. Serves 8.
