Introduction
I make this recipe for my family all the time. It is easy to change around. I omit feta for one of my children, add more spinach or sometimes I leave out the capers. I have also added cooked boneless, skinless chicken breast served it warm adding the spinach right before serving so that it does not wilt. It is a really tasty recipe. The whole grain pasta and spinach make it so nutritional. Hope you like it . This recipe makes approx 10 -1 cup servings.

Ingredients

Barilla Plus Penne Pasta 14.5 oz box
Garlic cloves (3)
Extra Virgin Olive Oil approx.1/8 cup
Balsamic Vinegar approx. 1/4 cup
Athenos Reduced Fat Feta Cheese 6 oz
Fresh Spinach approx 4 cups
Black Kalamata (pitted) Olives approx 20
Capers 2 Tbspn
Grated Parmesan Cheese 1/4 cup
Black Pepper
Directions
1. cook whole grain pasta according to directions, set aside in a bowl to cool to room temperature
2. Mince garlic cloves and add to pasta
3. Pour olive oil and balsamic vinegar over pasta, mix well, making sure that pasta is covered well.
4.Crumble feta and add to pasta
5. Tear (washed) spinach leaves into bite size pieces and add to pasta
6.Slice Kalamata olives and add to pasta
7. Add drained capers to pasta
8. Mix all together well and sprinkle with Parmesan Cheese and Black Pepper to taste.
Serve now or can be served chilled.You can serve salad warm if you like and try adding the chicken breast.
